Charges or payments towards deductible?

I'm switching jobs soon, but I have a surgery scheduled a few weeks before the switch. I don't want to delay the surgery so what I'm wondering is if it's charges that go towards deductible, or payments? For example, I get the surgery while on my current insurance, can I wait until I'm on the new insurance to pay and that'll go towards the new deductible? I hope that makes sense. I just want to make use of my deductible as much as possible. Thanks for any help!
