[Question - Insurance] Help finding immediate care for my mom

My mom [F53] recently suffered a post-surgery stroke and spent 6 weeks in the hospital until they insisted they exhausted all healthcare options. She came home last week with a feeding tube and part of her skull removed (allowed her brain room to swell). She needs continuous care and family/friends have been all pitching in to take care of her so my dad can go back to work to keep his job. She was denied disability and there is paperwork in the works for Medicaid, but her care needs are intense. My family needs me to help with her more starting Monday, but I am a stay at home mom for a 4 yo and 5 month old and it is too much for me to juggle. She had health insurance but they will not pay for anything and we need something fast (like Monday). On top of everything, she is extremely depressed (at least when I am watching her). Are there any immediate options to hold us over until we can get her on Medicaid or into a grant program for hospice?

We live in rural Georgia if that is of any importance (not Atlanta).
