Hair wash frustration, pls help

Sorry for the long post, I just feel frustrated with my hair and would appreciate any advice:

For the past year I've been noticing that while my hair had a very nice healthy structure and felt soft and pleasant to touch, it would become very greasy too fast. I had to wash my hair every single day (and till the end of the day it already would look very greasy).

Few weeks ago I started using soda as a hair wash and apple vinegar as a conditioner. (I know that there is some adaptation period) I had to wash hair every day and it would feel unpleasant to touch (greasy and dusty all the time).

I did it for couple weeks, but this would just frustrate me, so now i got a vegan shampoo bar from the local brand and it contains these ingredients: Sodium Cocoate, Sodium Olivate, Sodium Castorate, Sodium Almondate, Sodium Cocoa Butterate, Sodium Shea Butterate, Equisetum Arvense Extract, Glycerin, Urtica Dioica Leaf Extract, Melaleuca Alternifolia Leaf Oil, Thymus Vulgaris Leaf Oil, Linalool, Limonene

While my hair feels better then after soda-vinegar (not so dusty and greasy to touch), it still doesn't feel fresh and soft (still feels a bit greasy and a bit like a straw).

Does it suppose to be this way? Do I just have to be patient and wait it out? Is this just a transition period? Or just these products don't suit me?

Pls share your experience and tips! Also maybe some ingredients and bar soaps that you like.
