Can Somebody Help My Mom?

TL;DR: Mom not healthy, need help.

So here's the story: In August of 2015 my 49 (at the time) year old mom got some really bad food poisoning from beef nachos at a restaurant called Nasties -- great, right?

Well, after that food poisoning episode:

-My mom became fully lactose intolerant, whereas she was not before the episode. She had diarrhea for 1.5 months after the episode because she was still eating dairy. Once she stopped eating dairy the diarrhea went away. -Her appetite immediately diminished and she lost 13 pounds over the following 6 months because there wasn't much food that she could handle. She gained some weight back, but just in the past 7 days she has lost 4 pounds. She has gone from 152lbs in August of 2015 to 136lbs today.

She had a colonoscopy in August 2016 and they removed three small precancerous polyps from her colon.

She started drinking apple cider vinegar and taking a probiotic. Apple cider vinegar every 3rd or 4th day because too often and she gets the shits. Probiotic she took for 6 months and then stopped because she felt it wasn't helping and it was expensive. The probiotic helped at first but eventually that effect tapered off.

My mom has seen a gastroenterologist and her primary care doctor. Primary care doctor would not give my mom a gall bladder ultrasound, so she sent my mom to a gastroenterologist. Gastro guy had celiac test done: tested negative; chron's disease: negative.

That's a lot. There's more. This may be related but we don't know:

She experiences shortness of breath upon [a small amount of] exertion. Walking 20 feet too quickly can make her dizzy, same thing with walking up stairs at regular speeds. This started in January. Primary care doctor thought it was heart-related, so she sent mom to the emergency room for a chest xray, labs, blood pressure tests, EKG, and all they said was to increase salt intake and see a cardiologist (because blood pressure was low when she was in the ER). Cardiologist could not get blood pressure to raise in the office, so he sent her to Ear, Nose, and Throat (ENT) doctor because he thought she had vertigo. ENT wanted her to do vestibular therapy for vertigo, but she didn't do it because she doesn't believe she has vertigo (she is not always dizzy). ENT sent her to pulmonary physician (lung doctor). He did a pulmonary function test which showed signs of asthma. He had her try 4 different inhalers (3 preventative, 1 rescue) and a pill for asthma and they all made her symptoms worse and/or gave her new side effects/symptoms. As you can assume, my mom's medical bills are sky high, with the stress of paying them off probably making the situation worse.

Since the asthma meds and inhaler did not work, she went to see an allergist. Here's the allergies my mom has has (none of which, to her knowledge, are very strong at all): pollen, mold, cockroach poop, dustmites, and trees and grass. Allergist prescribed a different asthma pill but it wasn't covered by insurance, so she didn't try it. He didn't try for food allergies because her symptoms "don't fit." She still doesn't eat dairy (she does has a bite of cheese here and there) and meat gives her diarrhea the next day. She currently doesn't take any meds.

I know this was a lot, so thank you for reading this far. Does anybody have any idea what could be going on with my mom? We still really don't have any idea.
